Despite the fact that the price has been adjusted a little bit closer to that of other chef's tables, this is still probably the best fine dining deal in the city. Adam does a superb job with diverse fresh ingredients, and the sommeliers are always helpful and informative and make excellent pairing choices. My husband and I try to go back at least quarterly to see what new things are in store.

Every time we go there we get royal treatment. Great staff and knowledgeable. Go and be served by Russell or Dan the bartender. Tell'm Ces sent you and enjoy. Try the wines. Try the slliders.Samantha O.

7/27/2010 Yummy!! I love meat and they know what they are doing here! I told my dad that I wanted a steak the next time he was in the area. He did some research and one of his customers recommended Hinterland. Boy, I'm glad he did!

We had reservations, but the place was empty when we got there. It did not take long to get busy though! I thought the place was going to be stuffy once we walked in but I was definitely wrong. The decor was great, like hunting lodge meets upscale New York apartment. The service was excellent. They were helpful with explaining the menu options for the day, very friendly and knowledgeable.

The pairings of each meat with each side was perfect, but our waitress also said we could change a menu item if we liked another combination better, the chef was very flexible. My steak was cooked perfectly medium-well, tender and juicy. By the end of the meal, I was stuffed! The portions seemed on the smaller end for the price, but I still ended up with leftovers. (Yay!)

Definitely expensive, but I'd say it was worth it (I mean, my dad did foot the bill, but still!) I'll go back when I'm working full-time again!

7/22/2010 My new favorite restaurant in Milwaukee!! The name and dual restaurants (the other in Green Bay, WI) allows for a quick pause but my experience completly blew me away.

First, no corkage fee is an absolute pleasure which can improve any meal from the start. The food pariing and execution of this meal was amazing with attention to detail not seen in Milwaukee for a while. I moved towards the Quail immediately which had a flavor profile that anyone would enjoy.

My only negative was the salad course as deconstructed caesar salad always turns out terrible. However, people at my table tried the soup selection which they seemed to enjoy.

One of the more enjoyable restaurants in the area with friends or significant other. The most comforting aspect is they know how a restaurant should be run and for the night to have momentum throughout the meal. A must dine in Milwaukee!
